Kevin Keller, cofounder of Fulton & Roark, put it plainly: ‘Where rose can feel formal and heavy, and jasmine can feel heady, peony reads as fresh, green, and almost fruity.’ That quality gives it unusual flexibility. Unlike heavier florals that can feel weighted down by wool layers and cold air, peony lifts.
